Matcha Banana Chocolate Chip Cookies Inspired by Candace Kumai

I just started watching a new show on HBO Max called Selena + The Chef. If you haven't seen it yet, I 100% recommend it. It really has inspired me to try new things in the kitchen. The show follows Selena Gomez, during quarantine, getting cooking lessons by famous chefs. It's really a wholesome show and you'll learn a lot, plus it's so fun to watch. Candace Kumai joined her on the third episode to teach her how to make Spicy Miso Ramen and Match Chocolate Chip cookies. I ran to Whole Foods right after the episode to get the ingredients I needed to make homemade Ramen, so stay tuned.. I realized I had all the ingredients to make the Matcha Chocolate Chip Cookies, so I gave it a try. I did modify the recipe just a little bit, nixing the Coconut Oil and adding an egg.. but they came out so great and they were definitely a family-pleaser. Sweet, soft, chocolatey, and just plain amazing -- these cookies are seriously so good, so easy, and super quick, you NEED to try them, like today! Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 10 Minutes | Cool Time: 10 Minutes

Yields: About 2 dozen cookies


Ingredients:


3/4 All-Purpose Flour

1/2 teaspoon of Baking Soda

2 teaspoons of Matcha Powder

1/4 teaspoon of Sea Salt

2 tablespoons unsalted butter (1/4 stick), at room temperature

1/2 cup of brown sugar

1 large egg

1 teaspoon of Organic Vanilla Extract

1 large banana, mashed

1 1/2 cups of Rolled Oats

1 cup of Semi-Sweet Chocolate Chips

1/4 cup of Water


Method:


Preheat the oven to 350 degrees.


In a large bowl, combine the flour, baking soda, salt, and matcha powder (I used Coconut Matcha because it's all I had, but if you use regular Matcha Powder, your cookies will appear more green like they should).



In medium-sized bowl, combine the butter and sugar and beat together on medium speed for about 1 to 1 1/2 minutes, until fully combined and creamy.



Add in the egg and vanilla to your cream mixture and beat for about 30 seconds. Mix in the mashed banana and water, and beat until all ingredients are fully incorporated.


Add the creamy liquid mixture to the large bowl with the flour mixture and beat on low until all ingredients are fully combined. Finally, add in the oats and chocolate chips.



Line a baking sheet with parchment paper and spoon dough into balls (you can also use an ice cream scoop for this step, it makes things a little easier) and place on the cookie sheet about 1 inch apart from each other.



Bake for about ten minutes, or until golden brown. After cookies are finished, cool for about 10 minutes before serving.
