Mama Missirian's Famous Pumpkin Chocolate Chip Loaf

This is one of my favorite recipes ever and it truly has a special place in my heart. If you are a close friend of mine, you know by now that no holiday season is complete without a special delivery of my mom's famous pumpkin chocolate chip loaf. This sweet treat has become a holiday tradition for us and we make at least a dozen batches every year. Over the years, we have perfected the recipe and made it just how we like it -- not too sweet, but very flavorful. It is truly a crowd pleaser and a very very highly requested delicacy. Total Time: 1.5 hours | Prep Time: 15 minutes | Cook Time: 45-50 minutes | Cool Time: 15-20 Minutes

Yields: 3 Loaves or 2 Loaves and 6 Muffins





What You'll Need:

- 2 cups of sugar

- 3 1/2 cups of flour

- 4 teaspoons pumpkin spice seasoning

- 1 teaspoon of salt

- 2 teaspoons of baking soda

- 1 teaspoon of baking powder

- 2/3 cup of vegetable oil

- 2/3 cup of water

- 1 can (15 ounces) of pumpkin puree

- 4 eggs, beaten

- 2 teaspoons of vanilla extract

- 6 to 12 ounces of semisweet chocolate chips



Method:


Preheat oven to 375 degrees.


Lightly grease three loaf pans (they should all be the same size). I like to line my loaf pans with parchment paper even though they are non-stick, because it makes them really easy to remove from the pans after they are fully cooked.


In a large bowl, sift your flour. Combine the sugar, spices, salt and baking soda with the sifted flour.



In a medium bowl, combine the oil, water, pumpkin puree, vanilla extract and eggs. Mix together until fully combined.


Add the liquid mixture to the flour mixture and combine thoroughly, making sure there are no unblended dry ingredients lingering at the bottom of the bowl. Add the chocolate chips and stir to combine.




Divide the batter equally among the pans.


Bake the loaves for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.


Let cool for about 15-20 minutes before cutting and serving.
