In The Mood For Tabouleh


One of my favorite things to make with Parsley is Tabouleh. If you're not familiar with this refreshing dish, you need to be! It is a perfect appetizer or main dish for any occasion. With it's delicious lemony flavor, this Middle Eastern salad is definitely a crowd pleaser. Growing up, there were so many dishes I would get excited to eat-- whether my mom made them or we were able to indulge when we went over to my grandma's house-- and this was one of them. You can definitely adjust the flavors to your liking, but I think the more lemony the better. Keep scrolling for the recipe for the perfect Tabouleh and let me know what you think!

Total Time: 30 Minutes


Ingredients:


- 4 cups of parsley (washed, dried and minced)


- 3 medium-sized tomatoes


- 1 large onion


- 1 tablespoon dried mint or 1/2 cup of fresh mint (washed, dried and minced)


- 3/4 cup of bulgur #1


- 1/2 cup of fresh squeezed lemon juice


- 1/2 cup of olive oil


- 1 teaspoon salt


- 3/4 teaspoon of pepper (red or black)




Method:


Finely dice your tomatoes and onion.


Finely mince your parsley.



In a large bowl, mix together tomatoes, onion, and parsley.


Rinse the bulgur twice and add to the mixture.


Add in salt, pepper, mint, lemon juice, and olive oil. Mix well.



Serve cold accompanied by romaine lettuce or cabbage leaves.
